- 1 cup diced red onion
- 1 cup diced celery
- 1 cup diced carrots
- 5 cups low-sodium tomato juice

- ½ cup dry vegetable alphabet pasta, cooked according to package instructions

Makes: 4 servings
Step 1: In a medium soup pot, warm the olive oil over medium heat.
Step 2: Cook the onions, celery, and carrots in the soup pot until soft, about 5 minutes.
Step 3: Stir in the tomato juice and pepper and simmer for 20 minutes. Mix it up by adding your own favorite veggies!
